One of my favorite breakfast meals to make is an assortment of omelets. Here is my Extreme Western Omelet.

2 large eggs with 1 teaspoon of water whisked (add sea salt and cracked pepper to taste) cook and fill.

Fill omelet with shredded of each: pepper jack cheese, Vermont cheddar, extra sharp cheddar, Longhorn cheddar, 1 piece cooked and crumpled bacon and sausage, slivered white onion and green bell pepper. Place over veggies. I used an Asparagus Medley Stir Fry (found in frozen food section). Contains asparagus, broccoli, yellow squash, carrots, and snap peas cooked with olive oil, sea salt, cracked pepper, and garlic powder. Topped with organic sour cream and green onions.

Great way to get you veggies and it taste AMAZING!
