I was craving Tex Mex and have been up since before the chickens. Since its brunch time, I opted to make a Carne Guisada Omelet: 2 egg, extra sharp yellow cheddar and vermont extra sharp white cheddar, with onions, chopped butcher cut peppercorn bacon, carne guisada, gravy, sour cream. Sides: spanish rice & veggie medley & 1 slice of bacon.
