  • 280cal/ 14g/ 4 Large Whole Eggs (Costco, whisked, can sub Egg Whites, or Egg Substitute, or blend of Egg White and Whole Egg)
  • 180cal/ 8g/ 4 Slices Hickory Bacon (Costco, similar to Thick Cut, cooked crisp and chopped)
  • 200cal/ 26g/ 1 Cup Lowfat Cottage Cheese (can sub Whole Milk Cottage Cheese)
  • 110cal/ 10g/ 1/4 Cup Shaved Parmesean, Romano, Asiago Cheese (Separated 2 portions)
  • 210cal/ 4g/ 1 Large Regular Tortilla (can sub Low Carb)
  • 10cal/ 0g/ 1-2 Tsp Bacon Oil (can sub Spray Oil, used for coating pan for crisping flour tortilla)
  • 1/4-1/2 Cup Thin Sliced Yellow Onion (can sub White or Chopped Green Onion, or Chives)
  • 10cal/ 0g/ 1-3 Tblsp Everything Seasoning (Costco, can use any brand, basically the seasoning blend on top of an Everything Bagel)
  • 1 Tsp Granulated Garlic (Costco, McCormick)
  • 1 handful of fresh Arugula (no chopping needed, can sub Baby Spinach, or Chopped Baby Kale)
  • 1/2 Tsp Sea Salt (Costco, Maldon Sea Salt Flakes, can sub Coarse Sea Salt or Kosher Salt)
  • Fresh Cracked Pepper (to taste, can sub White Pepper, or add Red Chili Flakes)

I’ve seen this recipe for a High Protein Tortilla Quiche all over the net. I’ve made hundreds of Quiches of all types over the years. So, I decided to give this a try. There are a million variations, so I just went with what I’m craving and the easiest. Wasn’t certain what to expect with the cottage cheese. I can not express how easy and delicious this is.

RECIPE:

  • Preheat your oven to 400°
  • In a pan (or you can pre bake your crisp bacon), crisp up your thick cut bacon. Drain, chop or cut into nice size slivers. Set aside.
  • I heated my large tortilla in the microwave for about 30 seconds.
  • Grease your 8″ round pan. I used Bacon Grease for extra flavor and crispness.
  • Place now warm large Tortilla in 8″ round pan, fitting it into pan like a pie crust.
  • Layer your Arugula (all of it) first.
  • Then, layer your Thin Sliced Yellow Onions (make sure to read ingredients list about substitutions) on top is your Arugula.
  • Place one slice worth of Chopped Bacon on top of your Sliced Onion.

I layered my dish for depth of flavor.

  • In a large mixing bowl, whisk Eggs, Cottage Cheese, 1/2of yourParmesean, Romano, Asiago Shaved Cheese, Everything Seasoning, Sea Salt Flakes, Cracked Pepper, and Granulated Garlic.
  • Pour all the mixture into Tortilla fitted in pan.
  • Top mixture with remaining Parmesean, Romano, Asiago Shaved Blend Cheese.
  • Place on middle shelf in center of oven. Note: this probably can be made in Convection Oven, Toaster Oven, All In One Air Fryer Oven, even on a BBQ Pit, or Pizza Oven. I made it in a conventional oven.
  • Bake for 20-25 minutes, or until center is clean after piercing with toothpick, or fork, knives, or skewer.

Let cool for 5 minutes.

Cut into. 4 pie shaped pieces (can cut smaller).

Serve.

We normally would eat a traditional Quiche slice topped with Sour Cream, Chives, and more Bacon Crumble. However, since it was my first time making this, we ate it straight, as is.

Honestly, nothing extra needed. Creamy, firm, fabulous flavor. Super easy. Don’t be afraid to use different add ins. Basically anything you could or would put in a Quiche.

Highly recommend. Super yummy. Easy to make. Loaded with Protein. BIG FLAVORS. Literally can eat 1/2 for 500 calories and 36 grams of Protein (if made this way).

There are a million ways to increase protein levels, and lower carbs. So many ways to be creative too. Change cheeses up, switch meats or meat substitutes. Be creative. Always remember that a recipe is a guideline, not the only destination.
