I actually make this Orzo Salad all of the time. I’ve been making it for decades actually. It is one of my favorite salads. The only difference is I add Chickpeas/Gorbanzo Beans, Sun Dried Tomatoes, Tarragon, and chopped Green Onions too. But I came across this skeleton recipe for Orzo Salad, and wanted to share it. Especially, with it being Spring going into Summer. It is a great year round salad though. Can be a side dish or main course. Great with Steak, Shiskabobs, or even an alternative side for tacos. I’ve even added Salmon to it. Delicious. Might have to do it with some Shrimp soon.
