As temperatures rise we are all looking for delicious, cool and easy meals. This one happens to be both. Affordable too!
2 Small Zucchini or 1 Large
1 Lemon (juiced)
1/2 Avacado (mashed)
1 cup Basil (fresh and chopped)
Pinch Himalayan Pink Salt
Cracked Pepper (optional)
My bonus tips:
Asiago Cheese (shaved)
Olive Oil (I use Robust, but you can use Light Extra Virgin)
Pine Nuts (crumbled)
Garlic (minced or finely chopped)
Take your Veggie Pasta Shaver, shave thin long strands on Zucchini.
Take all the ingredients, except Asiago and Olive Oil, thoroughly blend together. Like a regular Pesto Sauce.
Mix new sauce with Zucchini noodles.
Sprinkle a little Olive Oil over.
Top with shaved Asiago Cheese.
All sorts of delicious full flavors. A wonderful cool recipe for lunch or dinner. Multiple the recipe for however many people are eating.
On a side recipe note. You can buy a Veggie Pasta Maker at almost any grocery store. I’ve even seen them in Walgreens, and Rite Aid in Kitchen Wares. They are usually under $20. The work beautifully, easy to use, and work on so many fruits and Veggies.
